Hot Hepburn Hint #8

I have this amazing book called The Audrey Hepburn Treasures, and it's full of unique little mementos that she saved over the years - candid pictures, script excerpts, handwritten notes, etc. It's so cool. But in this digital-wireless-instant-message society, we tend to prefer a convenient call over a written letter. But do you really want your children to remember you and your hubby's budding romance over IM conversations? Document your best friend's wedding with cell phone pics? You get the idea. This week's Hot Hepburn Hint is...

DOCUMENT IT!

1) Keep a journal - write down all your joys, fears, triumphs, defeats on a daily basis. If nothing else, it will be good fodder for your childrens' tell-all memoirs.

2) Don't throw out the good stuff - keep the movie stub from your first date, press that ugly carnation corsage from your senior prom, save the quilt your grandma made for you when you were born.

3) Print off pictures - go a step beyond the typical facebook post, and take that digital camera to Wal-Mart! Start a scrapbook, a photo album, or just organize your most precious memories in a cutely-decorated shoebox.

You'll be glad you did.

I've been MIA for a few days, but for a very good reason: my sister's 21st birthday! We headed to Hotlanta for a few days to shop, because as we all know, ATL is the shopping mecca of the South. Not Just a Pretty Face

The lovely UK songstress Natasha Bedingfield gets this week's Hepburn stamp of approval. Besides being super-cute and superbly talented (I'm sorry but "Unwritten" is really catchy.), the cheery crooner is actively involved in several different charities and organizations, including Global Angels, a children's charity founded by her very own mother. As an ambassador for the organization, she's visited orphanages and refugee camps, and has (gasp!) used her celebrity status to help people. Audrey would be so proud! But luckily you don't need a red carpet invite to get out there and support a cause you feel strongly about. Just find one and go for it. You heard the girl...today is where your book begins.

Rub a Dub Dub

So I'm currently obsessed with taking olive oil baths. I know, I know, it kinda sounds like you're cooking yourself in a big pot on the stove, but it's seriously divine. To get skin that is unbelievably soft and silky, just run a bath as usual, exfoliate with your good friend The Loofa, then sprinkle a couple tablespoons of EVOO in the tub. Yum! I would encourage you to immediately clean up afterwards though, otherwise your roommate or hubby might jump in the shower later and find themselves skiing and flailing on a greasy bed of oil and porcelain. (Sorry Drew!) To top off your pamper-fest, put on some slinky jammies, do your nails and slide into bed early. Then, poof! Wake up to lovely baby skin.

Yes, folks, wedding season is upon us, and no one loves a good playlist for The Big Day more than I do. I know, I know, the economy is terrible, is swine flu is abounding, and I'm not sure how it's been in your neck of the woods lately, but the weather here in Nashville has been downright gross. There's always a lot of things we could complain about. But, rather than getting hunkered down in the mire of negativity, let's (I'm talking to myself here) try to take the high road and be positive. So, rather than finding reasons to sulk, gossip, or complain, try out this week's Hot Hepburn Hint...

More Dessert

I realize this is the second posting in a row concerning baked goods, but I just can't help myself. I told my sister that all I wanted for Mother's Day were those unbelievable coconut cupcakes she makes, and she delivered. Let's just take a look, shall we?



They really are like little drops of heaven. Now that I've sufficiently licked my computer screen, let's get down to business.

First of all, I'm sorry to report that, unlike my last dessert commentary, these have nothing to do with healthful eating. In fact, they'll probably take a year or two off your life. But, as Paula Deen says, if I get hit by a truck tomorrow and die without ever using all that butter, I'll be mad. You're seriously going to have to do about 20 extra Tracy Anderson sessions after these, but they're worth it.

Secondly, these babies are a process. Abby gets up at the crack of dawn to start sifting the flour and doesn't drop the final coconut sprinkle on until sundown later that day. Ok, so it doesn't take that long, but I would allow several hours to craft these little gems.

And finally, here is the recipe. I believe it's a Barefoot Contessa original, so Ina, if you're listening, thanks for making us all really fat. Enjoy!

Coconut Cupcakes

3/4 pound unsalted butter at room temperature
2 cups sugar
5 extra-large eggs at room temperature
1 1/2 teaspoons pure vanilla extract
1 1/2 teaspoons pure almond extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
14 ounces sweetened, shredded coconut
Cream Cheese Icing (recipe follows)

Preheat the oven to 325 degrees.

In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar until light and fluffy, about 5 minutes. With the mixer running on low, add the eggs one at a time, scraping down the bowl after each addition. Add the vanilla and almond extracts and mix well.

In a separate bowl, sift together the flour, baking powder, baking soda, and salt. In three parts, alternately add the dry ingredients and the buttermilk to the batter, beginning and ending with the dry. Mix until just combined. Fold in 7 ounces of coconut.

Line a muffin pan with paper liners. Fill each cup to the top with batter. Bake for 25 to 35 minutes, until the tops are brown and a toothpick comes out clean. Allow to cool in the pan for 15 minutes. Remove to a baking rack and cool completely. Frost with cream cheese icing and sprinkle with the remaining coconut.

Cream Cheese Icing

1 pound cream cheese at room temperature
3/4 pound unsalted butter at room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
1 1/2 pounds confectioners’ sugar, sifted

In the bowl of an electric mixer fitted with a paddle attachment, blend together the cream cheese, butter, and vanilla and almond extracts. Add the confectioners’ sugar and mix until smooth.

It is very important that the cream cheese and butter are at room temperature and that the confectioners’ sugar is sifted to ensure no lumps in the icing.

Makes 18 to 20 large cupcakes.

Sugar-Free Never Looked So Good

I have one word for you today: Babycakes. Their delectable, gluten-wheat-soy-sugar-egg-casein-free concoctions are finally available in recipe form! (cue Handel's Messiah chorus) So if you see me knocking over toddlers and elderly women on the street to get to Barnes & Noble, that's why. They've got chocolate chip cookie sandwiches, people! Here's to guilt-free dessert.

New Music

I'm really enjoying this debut album from Angel Taylor right now. If you like tunes in the vein of Sara Bareilles/Colbie Caillat, I think you might enjoy it as well. Plus, her name is Angel Taylor. It just doesn't get much cooler than that. I have this theory that some people should be famous just because of their name - like that one kid from O-Town, remember him? Ashley Angel? That's a famous name. One of my friends at work knows this girl named Sophie Star. She should be famous too. Aaaaaanyway, back to this CD. My favorite tracks are Epiphany and Chai Tea Latte. It's fun, new music for spring. Happy listening!
